Phil Abram heads to Round Top, TX for a rich, rustic Italian dinner celebrating Terra Mater paired with the wines of RSV.
In ancient Roman mythology, Terra Mater (Mother Earth) is thought to be the first primordial goddess to materialize from Chaos long before the Olympians and Titans ruled. While most people refer to Terra Mater as an Earth goddess, she is much more than that. Terra Mater was a goddess of nature, marriage, fertility, and the Earth itself. She is often depicted in Roman art as a woman half submerged in the Earth and often adorned with plants, animals, and a cornucopia, a collection of flowers and fruits in a basket. Tonight’s dinner celebrates the gifts provided by Mother Earth and treats each ingredient with great care and attention in gratitude for what we have been given. Much like the food, Robert Sinskey Vineyards has selected perfect pairings from their organic vines that explore the complex flavors that are possible from simple ingredients.
