Merguez Spice

Ingredients

  • 1 tablespoon plus 1½ teaspoons paprika
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground allspice
  • 1 tablespoon plus 1½ teaspoons ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon plus 1½ teaspoons ground fennel
  • ¼ - ½ teaspoon ground cayenne – to suit your taste
  • 4 medium garlic cloves, minced

Directions

Mix the dry spices together. Add the minced garlic just before using the spice mix.
